Black Bean Brownies

Okay okay I know what you are thinking- “Is this a joke? Ew, why would I ever ruin brownies with black beans.” BUT trust me on this one! You will have no idea black beans are the main ingredient. Don’t believe me? Make them for your friends, say nothing, and see what they think! (and then email me with the final verdict)

Black Bean Brownies


  • 15 oz can black beans, drained and rinsed

  • 2 eggs

  • 1/3 cup coconut oil, melted

  • 1/2 cup sugar

  • 1 tsp vanilla

  • 3 tbsp unsweetened cocoa powder

  • 1/2 tsp baking powder

  • 1/2 cup chocolate chips

  • 1/3 cup shredded coconut


  • preheat the oven to 350 F
  • add all ingredients (except chocolate chips) into the blender

  • blend on medium-high for 20-30 seconds

  • stir in chocolate chips

  • bake in an 8×8 pan for 20-25 minutes
